A protected snapshot, not a locked workbook
Your spreadsheet is converted to PDF and that PDF is encrypted with AES-256. The output is a password-protected document that anyone can open with the password and nobody can edit — which suits distributing figures, and does not suit collaboration.
Check the page layout first
This is the one thing worth doing before converting. Spreadsheets have no natural page size, so a wide sheet paginates in whatever way the conversion decides, and columns can land on separate pages from the rows they belong to. In Excel, set the print area, choose landscape, and use "Fit all columns on one page" — then convert. What you see in print preview is essentially what the PDF will be.
What is lost, and why that can be the point
Formulas become their computed values, and interactivity — filters, pivot tables, macros — does not survive. For sending a set of numbers to someone who should not change them, that is a feature: the recipient cannot accidentally recalculate anything, and your formula logic is not exposed.
Note the flip side: if your workbook has hidden sheets, hidden columns or comments containing information you would rather not share, check them before converting. A hidden column may be excluded from a PDF while remaining in the source workbook you might send alongside it.
Excel's own protection is different
"Protect Sheet" in Excel prevents edits but does not encrypt — the data is readable by any tool that opens the file, and the restriction is trivially removed. Encryption is the stronger guarantee, and it is what this produces.
